As my daughter is lactose intolerant I started to make cashew based ice cream. Now, we only eat homemade and I think it tastes better than any store bought. I still try to improve, and was wondering if there are any homemade ice cream makers here?

    Ketogenic diet (over 10 years now), I make my own and love it. Though I must say, when I lived in South Africa, there was a banting (≈ SA keto) market and a woman had her ice cream stand there. It was great, then she flew to Italy to take a gelato course and it became even better. As I said, I love mine, but given the choice (alas, back in Germany) I’d go with hers.

    Recipe wise, I use this custard recipe as a rough base (as usual for me, tonka beans instead of vanilla. Sorry USA peeps, illegal for you), and then add what I feel like. I use a simple churner without a compressor. Might upgrade to a full one next year now that even we up north are getting longer summers ;)

      Tonka beans are illegal to sell in food, but you can get them shipped online and use them in your home kitchen. I’m in the US and I have some in my pantry right now. I’ve tried them in cookies but I’ll try them in ice cream too, thanks for the tip!

      I have upgraded to a compressor which is nice!

      I am not a fan of custard base, plus it’s too much work for me haha. All my dairy ice creams are phily style and we’re loving it.
